|VCultural interest evaluation||The Salsiccia Festival is an annual event that takes place in the town of Cancellara, in the province of Potenza, in the second weekend of September, dedicated to the promotion and enhancement of Cancellara sausage. This typical product prepared with pork cuts mixed with salt, wild fennel and chili pepper. The preparation still accoreds to the traditional ritual and makes it one of the most typical products of the place. This product is celebrated through itineraries and guided tours to the historical center, photographic exhibitions and educational workshops, tastings, as well as shows, concerts and moments of knowledge.|
|Context||The sausage of Cancellara has very ancient origins, but the first news about its production date back to 1700. The statistic of the reign of Naples in 1811 about eating habits in the district of Cancellara says that farmers "eat pork meat, which they make fat in their houses during the carnival period. This precious historical document also explains the way to produce the sausage: They put salt on the pork, they smoke it, and the sausages conserve themselves until the harvest period. " In confirmation of its prestige, Cancellara's sausage has earned two important quotations: the first in 1991 in the Agritourist's book(“volume del agristurista”) that collects the hundred best agro-industrial products in Italy, such as the Lardo di Colonnata; The second in the “Arca del gusto della fondazione Slow Food per la biodiversità” which gathers 800 gourmet products of excellence alla around the world.|

|Significant features||The families of Cancellara are devoted to the oldest and most established tradition, dedicating themselves to the breeding of pigs, the slaughter and subsequent sausage making. Each stage contributes to making Cancellara sausage a delicate mixture of flavors and scents. The right balance between thin and fat, the use of spices such as senise pepper in powder and wild fennel, the use of the fireplace for the delicate drying phase, give the sausage of Cancellara a pleasant, unmistakable flavor made of tasty tones that intertwine as garlands.|
